In the centre of Metz, under the Pont des Roches, on the banks of the Moselle, Baptiste Pillet and Timothée Le Quiniou brew their beers (up to 500 hectolitres each year). The styles vary, from lager to flavoured beer, and are sometimes surprising: pepper stout, Blanche with Combava or Arsène Lupain, brewed with unsold bread.
